Ingredients you’ll need

  • 1 egg
  • 1/2 cup kefir or yogurt
  • 3 large bananas, mashed (or use 2 mashed bananas and one grated apple)
  • 2 Tbsp extra virgin olive oil (or other healthy oil)
  • 1/2 cup sugar
  • 1 tsp pure vanilla extract
  • 1/2 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Directions

  1. Whisk together the the mashed banana, kefir, egg, oil, sugar and vanilla in a large bowl.
  2. Meanwhile, preheat your oven to 375 degrees and arrange the muffin pan with paper liner or lightly grease the pan.
  3. Then combine the dry ingredients in a medium size bowl. And add the wet ingredients to the dry ingredients and stir just to  combined. Keep in mind not to over mix.
  4. Next is to divide the batter into the pan. And bake afterwards for about 20 minutes or until the toothpick inserted comes out clean.

Ingredients you’ll need

  • 1 cup lemon yogurt
  • 1 tablespoon honey
  • 1 teaspoon lemon juice
  • 2 cups halved fresh strawberries
  • 2 cups watermelon balls
  • 2 cups cantaloupe balls

Directions

  1. Begin by blend together the lemon yogurt, honey, and lemon juice in a salad bowl.
  2. Gently fold in the cantaloupe balls, strawberries, and watermelon balls. Then toss evenly to coat and serve.
